Mill Farm
has become surrounded by housing and industrial buildings as Longridge
has grown. Looking out east, the farm turned dairy is on the same level
as the top of Blackpool Tower, 18 miles away, but their roots go back
to the remote and beautiful Bleasdale in a farmhouse kitchen.
Singleton's is a fourth generation success story as it has moved with
the times and won the Queens Award for export in April 2000. It is down
to the tenacity of Bill Riding who persuaded Brussels to protect Beacon
Fell Lancashire Cheese, a much coveted PDO (Protection of Designated Origin).
Throughout Europe and the world, the PDO seal means it has come from a
unique sandstone landscape within five miles radius of Beacon Fell. Strict
rules lay down that the milk must come from within this area and the traditional
two & three days curd method of making is the property of this local
farming community. Stilton has a similar PDO.
Grandma Singleton would be proud to see that her recipe for a strong 10
Month Matured Singleton Lancashire Cheese is fast growing in popularity.
Beacon Fell Traditional Lancashire is matured for two months and has PDO
status.
